Summer seems to have arrived early this year and during this time of year I’m forever looking for recipes I can make for the family that doesn’t require using the oven. I found this granola bar recipe last year and they were an instant hit with everyone! Best of all it’s super easy, fast and I usually have all the ingredients on hand to make them whenever the craving for chocolate strikes!
Summertime Granola Bars
1 Cup Butter
1/2; Cup Brown Sugar
1 teaspoon Vanilla
2 Cups Old Fashion Oats
1 Cup Quick Cooking Oats
1/2; Cup finally chopped nuts (Pecan, Walnuts or Almonds)
1 Cup Semi-sweet Chocolate Chips
1/2; Cup Peanut Butter
Lightly Grease a 11”x 7” inch square pan.
- In a large saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla until blended. Add the oats and cook over low heat 2 to 3 minutes stirring constantly until ingredients are well blended. Firmly press half of mixture into the bottom of the prepared pan. Reserve the rest for topping.
- In a microwave safe bowl, add chocolate chips and peanut butter. Microwave on high for about 1 minute. Remove from the microwave and stir chips and peanut butter until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or spatula.
- Spread the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate for 2 to 3 hours. Bring to room temperature before cutting into bars.
