Apples and Pumpkins

There is just something about autumn that appeals to me although I wouldn’t say it’s my favorite season as I like spring just as much. Brilliant colors, falling leaves, brisk temperatures, hayrides, corn mazes, apple picking, pumpkin patches… Speaking of apples and pumpkins…

Recently I discovered a way to bring both seasonal favorites together. Each month at our ladies gathering, the fruits of the season are a staple of our breakfast fare.  If you like apples and pumpkin, this Fluffy Pumpkin Pie dip will make a welcome addition to any holiday feast.  Thanks Lisa for preparing this for us!003

Fluffy Pumpkin Pie Dip

  • 15 oz can pumpkin
  • 3/4 cup brown sugar (Splenda/sweetener would work too) (Lisa used 12 packets Stevia (1/2 cup) and a 1/4 cup brown sugar)
  • 1 tsp vanilla
  • 1/8 tsp cinnamon
  • 1/8 tsp pumpkin pie spice (or more to taste)
  • 6 oz fat free Greek yogurt (I used Chiobani)
  • 8 oz cool whip free
  • cut up apples to dip (not in Calorie count)

Mix pumpkin with brown sugar, vanilla and spices, blend well. Mix in yogurt. Fold in cool whip and chill in refrigerator until ready to eat.
Makes about 6 cups, or 12 1/2 cup servings at 103 Calories each.

Fat: 0.1g  Protein: 1.8 g  Carb: 27.7 g  Fiber: 0.9 g
